Cauliflower fried rice
Ingredients
Serving 4
1 head cauliflower, broken into florets
Red onion sliced, scallion chopped, green peas all together 1 cup
2 tablespoons butter
1 clove garlic, 1 piece ginger minced
½ teaspoon cumin
½ teaspoon coriander
½ teaspoon garam masala
½ teaspoon turmeric powder
1 tbs lemon (juice)
1 tbs chopped fresh cilantro
Preparations
Process cauliflower florets in a blender or food processor until broken into small pieces about the size of rice.
Heat butter or ghee in a skillet over medium-high heat
add sliced onion, green peas,garlic, ginger saute with any oil
add cauliflower rice, cumin, coriander, garam masala, turmeric,
salt, and black pepper. Cook, stirring occasionally, until cauliflower is softened, about 10 minutes
garnish with chopped coriander leaves and green onion.
